The fresh fruit of Litchi Chinensis has an oval shape covered with inedible lumpy skin, green when unripe and red when ripe.
Its flesh is white, shiny, juicy, fragrant, and has a delicate taste of muscat and pink grapes. Inside there is a large core similar to that of medlars.
The best time to taste the lychee is when it reaches the peak of ripeness if the fruits are not well ripe, they are quite tasteless.
The lychee tree is an evergreen that reaches 10-20 meters and bears fruits that can reach 5 centimeters long and 4 centimeters wide.
The fruit of the lychee grows in clusters and reaches maturity in late autumn. The bark is grey-black, the branches brown-red. The leaves, composite, are measure between 10 and 25 cm, sometimes more, with 2-4 pairs of small leaves.
The flowers come out on a terminal inflorescence, with many panicles that come out on the year’s growth. The lychees do not reproduce by seed, except in case of a selection aimed to get new varieties.
Some cultivars produce a high percentage of fruit with an aborted seed, much smaller than usual, called the chicken tongue. These fruits are generally charged a higher price, having more flesh.
Its vitamin C content is as high as that of citrus fruits. Potassium is necessary for the transmission and generation of the nerve impulse, regular muscle activity, and intervenes in the water balance inside and outside the cell.
While magnesium is related to the functioning of the intestine, nerves, and muscles, it improves immunity and has a laxative effect.
The months of November, December, January, and February are when we can find fresh lychees, the best way to consume them.
The rest of the year, we can resort to canning, although then the presence of syrup increases its caloric value and fast-absorbing sugars.
